
Banana Pancake Recipe
Whether your family calls them
hotcakes, flapjacks, griddle cakes, Johnny cakes, or plain old pancakes, they
all have a special place on the American breakfast table. A few helpful hints
will ensure a fluffy, golden stack every morning.
Banana Pancakes
2 eggs
1 3/4 cups milk
1 Tbsp oil
2 cups pancake mix
Combine all ingredients. Spray 6 individual #3 cast iron pans with cooking spray. Divide pancake mix evenly between cooking pans.
Top pancake with your favorite granola. Bake the pancake at 425° until lightly browned, about 12-15 minutes.
While pancake is baking, combine 4-6 sliced bananas with 1/4 cup butter and 1/4 cup maple syrup. Cook on high heat until bananas are well browned.
Remove pancakes from pans and put on individual plates. Top with bananas, whipped cream and more maple syrup.
